This small batch of agave Epsadillon (a. Sp) is a rarity. Not to be confused with the smaller and blue-leafed Espadin, Espadillon is the local name for large, green-leafed agave variety that was the most common in the region before it was supplanted by government-provided "Espadin" in the 1970's. Nowadays, few people still continue to cultivate Espadillon due to her longer life cycle, and her flavors are virtually unknown outside of the Oaxaca Mixteca Alta. Fortunately, young mezcalero Emmanuel Ramirez Lopez and his father Anatolio Ramirez have continued to produce the agave on their own lands, and they are able to make a handful of small batches each decade. Emmanuel hand-harvested these cultivated agaves mere meters from his home, roasted them in an underground oven with firewood for four days, fermented them naturally wiht spring water and double-distilled the mash with a homemade still fashioned from a stainless steel "tamalero" and red clay-pot sitll condensing chamber. Blended with heads and hearts by Emmaneul 140 litros produced in May 2021, bottled in June 2021.
