It was not the presence of flies ("mouches") but of bees and beehives in this area located south of Beaune, overlooking Pommard, that gave the vineyard its name. "Clos des Mouches" is one of Burgundy's gems and is certainly in the same league as a Grand Cru. Indeed, its location on the slope gives this wine a great deal of precision and purity.
TASTING
The notes of white flowers, honey and beeswax are telling signs of a high-caliber wine. The palate is racy and chiselled with incomparable length.
FOOD/WINE PAIRING
Honor this wine by savoring it alone to appreciate its full range of aromas and flavours. You may also enjoy it with fish or white meats cooked in cream.

Serve between 12 and 14°C. (53°F - 57°F)
This wine is ready to drink or it may be laid down for 2 to 7 years or more.
From a 0.75ha plot at the top of the slope, in the Clos des Mouches, where Bichot owns some vines that give a wine of winning concentration. There is pleasantly ripe apricot and pear fruit, with a broad feel on the palate. Regal in stature, perhaps lacking a bit of acidity, although many will enjoy its rich character.

An opulent style, this delivers tangy apple, butterscotch and toasted spice flavors backed by a spine of acidity. It's harmonious, with the butterscotch element lingering. Drink now through 2025. 320 cases made, 34 cases imported. — BS
The 2019 Beaune Clos des Mouches 1er Cru Blanc has a vibrant, energetic bouquet, the citrus fruit, mango and white chocolate scents bursting from the glass. The palate is well balanced with a smooth, viscous opening. Good concentration here, and very long and sustained. This represents one of the best whites from Bichot this vintage.

A vague whiff of the exotic suffuses the ripe aromas of melon, pear and apple-scented nose. There is fine volume to the succulent and caressing medium-bodied flavors that conclude in a bitter lemon-inflected finale that is borderline tannic. This will definitely need at least a few years of keeping to round out the finish.
