The “Cuvée St-Pierre is high from a selection of” Vaillons, bottled after 2 years of breeding (1 year tank, 1 year in barrels). It is characterized by its maturity and its pleasant roundness. The Chablis Village, exposed on the slopes opposite the first growths are on very chalky soils.

Ripe and fresh aromas of apple and pear are trimmed in discreet citrus and Chablis elements. The delicious, fleshy and round medium-weight flavors possess a relatively easy-going mouthfeel while the lemon-tinged finish is clean and dry. This had just been bottled and I would advise holding it for 2 to 3 years in the hopes that better depth will develop.
