Shichida 75 is made by Tenzan Brewing Company in the Saga Prefecture using Yamada Nishiki Rice. It is a "Genshu" Sake, meaning it will have an elevated alcohol content because water is not mixed into the sake after brewing. This is a full bodied sake with notes of brown sugar, dried figs, and dates. There is a slight sweetness to the sake but it is balanced with a refreshing finish.
