LIGHT & HERBACIOUS

Takatenjin sakes are produced by DOI brewery in Shizuoka prefecture. DOI is an environmentally conscious brewery running on solar power with on-site water treatment and other renewable energy sources. Sword of the Sun is made from Yamada nishiki and Haenuki rice, and has notes of cucumber, juniper, and pear, evoking memories of Gin. Pair with Whole Grain Salad or Siracha Shrimp.
