The Sasaichi Brewing Company gives us a truly refreshing sake with Dan Junmai Ginjo. The delicate notes of rice, peach, and nectarine combine with a minerality to honor the Yamadanishiki rice. Best to drink at room temperature.

From the Kato Kichibee Shoten brewery in Fukui, Born Muroka Nama Genshu Junmai Daiginjo (unpasteurized) sake delivers a smooth yet lively mouthfeel and rings with notes of roses, cooked banana, and leather while also delivering a savory umami taste. Keep refrigerated and serve cold.

In Niigata, Katafune 13 Junmai Ginjo Genshu from the Takeda Sake Brewery is following tradition and continues to brew umakuchi (sweeter) sake. This sake is a triumphwith notes of honey and melon that balance the sugar with bright acidity. Serve with your favorite dessert or as an aperitif.
