The Caillerets from Alvina Pernot has exotic aromas of grapefruit, hawthorn flowers, and spice with a strong mineral underpinning. The texture is crisp with a balance of bright acidity, light body, and expressive fruit character. The wine comes from an exchange of must fermented in her emerging style with all the lees in used casks; no sulfur is used before bottling. The premier crus from this cellar could use a few years before opening, and then they should hold for at least a decade after that.
