Tank sample. Elegant and concentrated premier cru that has the florality and acidity associated with Vaillons, together with extra concentration from the old vines. Mineral and a touch of salinity on the finish. Elegant, complex wine.

The 2021 Chablis Les Vaillons Vieilles Vignes 1er Cru is well-defined on the nose with scent of orange blossom, honeysuckle and light waxy scents. The palate is well balanced with a citrus-fresh entry. Tangy orange rind and hints of marmalade on the mid-palate with a nice grip on the sappy finish. Certainly one of the better Vaillons that I have tasted

There is an interesting hint of crushed fennel to the aromas of mineral reduction, white pepper and quinine. The medium-weight and stony flavors are not quite as dense though they are finer while displaying excellent tension on the linear, balanced and lingering finale. This needs to add depth but it appears to be quite promising.
