Elk Cove was one of the first wineries founded in Oregon. It was started in 1974 by Pat and Joe Campbell and is currently run by their son Adam. During 2020 (yes, COVID), I had the opportunity to work at Elk Cove both in the winery and as the harvest chef. After a long day on the sorting table, a glass of bubbles would always call my name and their brut rose hit the spot. The fruit is coming from the Campbell's estate owned La Boheme vineyard which overlooks the winery and is 100% Pinot Noir. Made in "method Champenois," it has small bubbles with a nose of underripe cherries and strawberries and hints of baking spice. The palate mimics this with the addition of some citrus and pie crust notes. It is super refreshing and a great bubbly for Spring and Summer. I hope you enjoy it as much as I do! - Melanie Kaman
