This Big Pour wine from our 2021 vintage is crafted mainly from blocks 1A, 1B, and 3 on our property. Our organically grown Cabernet Sauvignon from the Kelly Fleming estate is complemented by just a hint of Malbec from the estate.
This 2021 Cabernet Sauvignon enchants with a multi-layered sensory experience that captivates from the first sip. Intriguing aromas of candle wax intertwines with dried plums, while a delicate herbal flourish reminiscent of lavender stems adds an ethereal quality. Macerated strawberries and boozy Maraschino black cherries dance gracefully on the palate, accompanied by a luscious chocolatey entry that gives way to a symphony of dark purple fruits, including ripe berries and cherries. Subtle hints of horchata and cinnamon add depth and complexity, culminating in a pleasurable and easy-drinking wine that beckons for another sip. Best enjoyed now, this Cabernet Sauvignon is a true testament to indulgence and immediate gratification.
Coming all from the estate vineyard (I believe there's a touch of Malbec), the 2021 Cabernet Sauvignon Big Pour has a solid nose of ripe currant and cherry fruits as well as spicy wood, chocolate, and chalky minerality. It's beautifully balanced, medium to full-bodied, has the vintage’s concentrated, dense, structured mouthfeel, supple tannins, and a great finish. It's perfect for drinking over the coming decade, and I wouldn't be surprised to see it evolve longer. Drink 2025-2035.
