FANEKANTSINI IS PRODUCED BY THE MAESTROS MEZCALEROS TRES COLIBRI COOPERATIVE. AN ASSOCIATION OF EIGHT PRODUCERS IN THE HIGHLAND CHONTAL AND SOLA DE VEGA REGIONS OF OAXACA, IT WAS FOUNDED IN 2012 BY MEZCALERA SOSIMA OLIVERA AGUILAR. ORIGINALLY FROM SAN MIGUEL SUCHIXTEPEC IN THE CHONTAL REGION OF SOUTHEAST OAXACA, SOSIMA COMES FROM A LINE OF MEZCALEROS AND RECALLS MAKING MEZCAL WITH HER FATHER AND GRANDMOTHER AS A SMALL CHILD. THE CO-OP FUNCTIONS TO HELP DIFFUSE COSTS, WORK, AND RISKS AMONG A NUMBER OF PRODUCERS WHILE SHARING IN THE PROFITS. THE COOPERATIVE IS COMMITTED TO ETHICALLY-PRODUCED MEZCAL WITH SMALL BATCH SIZES PRODUCED FROM NATIVE AGAVE AND PRESERVING THE CULTURAL TRADITIONS OF THEIR REGIONS.

AGAVE SEEMANNIANA IS OFTEN CONFUSED WITH AGAVE POTATORUM, AS THEY ARE BOTH COMMONLY REFERRED TO AS TOBALA. BOTH PLANTS HAVE SIMILAR FORMS OF BROAD, RATHER OVATE LEAVES, A PALE TO LIME GREEN COLOR, AND SMALLER SIZE, GROWING UP TO JUST SLIGHTLY OVER 100 LBS. IN THE CHONTAL REGION, THE PLANT IS KNOWN COMMONLY AS "CHATO," WHICH TRANSLATES TO SHORT IN ENGLISH. THE PLANTS TYPICALLY GROW SOLITARILY, PRODUCING NO CLONAL PUPS, IN RATHER STEEP, ROCKY TERRAIN WITH GOOD DRAINAGE. THESE CHARACTERISTICS AS WELL AS ITS SMALL SIZE MEAN HARVESTING ENOUGH FOR A BATCH CAN BE QUITE DIFFICULT. THIS AGAVE IS KNOWN TO PRODUCE BRIGHT, HIGH-TONED MEZCALS WITH FLORAL, VEGETAL AND CITRUS NOTES.
