This vintage continues the elegant and modern approach we developed to launch this new category last vintage. It combines the traditional champagne method of producing sparkling wine with the wonderful summer pleasure of enjoying freshly pressed Vin Gris that was ripening on the vine just a short time ago. It was immediately whole cluster pressed upon arriving at the winery, settled overnight, then fermented in neutral oak to bone-dryness. The following March, it was triage bottled and fermented to 11.2% alc., then disgorged with zero dosage. The entire process has been done by hand as a true labor of love for your enjoyment!
