FANEKANTSINI IS PRODUCED BY THE MAESTROS MEZCALEROS TRES COLIBRI COOPERATIVE. AN ASSOCIATION OF EIGHT PRODUCERS IN THE HIGHLAND CHONTAL AND SOLA DE VEGA REGIONS OF OAXACA, IT WAS FOUNDED IN 2012 BY MEZCALERA SOSIMA OLIVERA AGUILAR. ORIGINALLY FROM SAN MIGUEL SUCHIXTEPEC IN THE CHONTAL REGION OF SOUTHEAST OAXACA, SOSIMA COMES FROM A LINE OF MEZCALEROS AND RECALLS MAKING MEZCAL WITH HER FATHER AND GRANDMOTHER AS A SMALL CHILD. THE CO-OP FUNCTIONS TO HELP DIFFUSE COSTS, WORK, AND RISKS AMONG A NUMBER OF PRODUCERS WHILE SHARING IN THE PROFITS. THE COOPERATIVE IS COMMITTED TO ETHICALLY-PRODUCED MEZCAL WITH SMALL BATCH SIZES PRODUCED FROM NATIVE AGAVE AND PRESERVING THE CULTURAL TRADITIONS OF THEIR REGIONS.

PELON VERDE IS A BIT OF A MYSTERY. RESEMBLING ESPADIN OF THE AGAVE ANGUSTIFOLIA FAMILY, WHICH ARE SO UBIQUITOUS TO THE OAXCAN MEZCAL INDUSTRY, PELON VERDE HAS A RATHER SURPRISING ADAPTATION. UNLIKE MOST OTHER AGAVE, PELON VERDE ACTUALLY HAS NO SPINES ALONG THE LEAF EDGES, HENCE WHY ITS NAME TRANSLATES TO "GREEN BALD ONE" IN ENGLISH. WHILE MOST PEOPLE BELIVE PELON VERDE TO BE A MUTATED FORM OF AGAVE ANGUSTIFOLIA, IT IS NOT OFFICIALLY RECOGNIZED AS SUCH, WHICH IS WHY THIS EXPRESSION IS LABELED AS AGAVE SP (THE DESIGNATION FOR UNCLASSIFIED AGAVE).
