Producer's Notes

Fanny deposited wood staves with an oyster farmer on the island of Re, where they were dried for a year to take on a maritime influence. They were regularly watered with sea water to collect the sea spray and used to create two different barrels with two different levels of toast. The cognac sees 13 days in new barrels. A 2011 vintage 100% Fins Bois. Mineral and fresh.
