Producer's Notes

Gusto Historico Tobala y Bicuixe is produced by maestro mezcalero Eusebio Santos in Miahuatlan, Oaxaca. This was made with 50% Tobala and 50% Bicuixe. The agaves are cooked in an underground oven, milled by tahona, fermented with open air yeasts, and double distilled in a copper alembique still.
