PM Spirits Palo Cortado Sherry 2021 (750ml)

A distinctive Palo Cortado Sherry from the PM Spirits Project, assembled with the expertise of Eduardo Ojeda, longtime Sherry winemaker and co-owner of Equipo Navazos. The June 2021 saca is a blend of several casks selected from intermediate criaderas. The wine was originally destined to become Fino, but after a brief period of biological aging, its veil of flor died away, and the wine subsequently spent more than a decade aging oxidatively.

With an average age of 15 years, this is a particularly vivid expression of Palo Cortado, retaining a brisk, saline echo of its early life as a Fino while developing the broader richness and complexity associated with extended oxidative maturation. The palate is dry, concentrated and savory, with nutty, mature cask character balanced by freshness and a pronounced salty quality.
