Shinsei Junmai Daiginjo

Since 1667, Yamamoto Honke has been producing Sake in Kyoto. Eleven generations later, they offer us Shinsei Junmai Daiginjo. It is made with Kyonokagayaki Rice polished to 50% and the incredible spring water from the mountains surrounding Kyoto. When you experience Shinsei Junmai Daiginjo, you get the sensation of wildflowers, mellow melons, and marshmallow. This is a great Sake to pair with Ceviche, Sashimi, or an evening on the patio with your friends. If you want to taste it, this is one of the Sake featured at our Sakeman Experience on June 10th. Robert Sinskey 'POV' Los Carneros 2018

The 2018 Sinskey POV (Point of View) is a blend of naturally fermented, certified organically farmed, Merlot, Cabernet Franc, and Cabernet Sauvignon from the iron rich red volcanic soils of the Mayacamas foothills. The cooler climate in this region allows for the grapes to reach peak ripeness at considerably lower sugar levels than those coming from the warmer Napa locals, creating a more vibrant and focused Bordeaux blend than most would expect from a Napa cuvee. You'll find primary notes of Bing cherry, raspberry, blackberry, and red currant, with rose petal, sage, and mocha, framed by fresh acidity, lively tannin, and a remarkably reasonable 13.8% ABV. This is the perfect wine for those that love old school Napa Valley, and want something a bit more palatable for the summer heat.
