deep in the mountains of Puebla, maestro mezcalero Delfino Tobon Mejia crafts some of the rarest agave spirits on earth. From his hometown of San Pablo Ameyaltepec, Delfino distills impossibly small “nano-batches” under the 5 Sentidos label—each one a reflection of tradition, place, and sheer artistry.

For this Pechuga de Mole Poblano, Delfino adds a homemade mole poblano into the still during a final distillation. Chiles, nuts, seeds, spices, and chocolate infuse the agave spirit with savory depth and layered complexity, transforming it into something unlike anything else in the agave category. Our spirits buyer notes that this year’s batch is more balanced and harmonious than ever, with the mole’s intricate spice beautifully lifted by the natural sweetness of the agave.

What makes this bottling even more special is its connection to the acclaimed Oaxaca City restaurant and bar El Destilado. Founded by American restaurateurs and agave obsessives, El Destilado has been instrumental in showcasing Mexico’s most talented small producers.
