Augier Le Sauvage Cognac is a distinctive, terroir-focused Cognac that breaks away from the polished, oak-heavy style many drinkers associate with the category. Augier, one of the oldest names in Cognac, revived the house with a strong emphasis on transparency, minimal intervention, and showcasing the natural character of the spirit rather than relying on heavy blending or manipulation.

Le Sauvage is produced without added sugar or caramel coloring and is bottled with a notably raw, energetic personality. The nose is lifted and aromatic with notes of fresh grape, pear, citrus peel, white flowers, crushed herbs, wet stone, and subtle spice. Compared to more mature or oak-driven Cognacs, the profile here feels vivid and almost saline at times, with the distillate itself taking center stage.

On the palate, it’s bright, lean, and textured with flavors of orchard fruit, candied lemon, almond, fresh herbs, white pepper, and mineral-driven tension carried through a clean, dry finish. The oak remains very restrained, allowing the spirit to feel transparent and highly expressive of its base material.

There’s an almost eau-de-vie-like purity to Le Sauvage that makes it especially compelling for wine drinkers, agricole rhum fans, and anyone interested in seeing Cognac through a more natural, less commercial lens.

Best served neat, though a little air in the glass helps open up its more floral and savory layers.
