Perhaps the most unusual of Reisetbauer’s eaux-de-vie, Carrot is a crowd favorite. So familiar, yet so unique, the flavor is seemingly sweet without any lingering sugar, and has all of the earthy goodness you would expect from a root vegetable. Amazing! Harvested in September and October and fermented for 7–8 days, it takes 35 kg of carrots to make one liter of this distinctive eau-de-vie. 41.5% ABV
Description

Reisetbauer Carrot Eau-de-Vie is one of the most unusual and technically impressive spirits produced by master distiller Hans Reisetbauer in Upper Austria. Known for his obsessive precision and exceptionally pure fruit and vegetable distillates, Reisetbauer transforms humble carrots into a spirit that is remarkably aromatic, savory, and elegant.

Produced from carefully selected carrots that are fermented and distilled with extraordinary attention to detail, the spirit captures the vegetable’s natural sweetness and earthy complexity without becoming vegetal or heavy. The nose opens with fresh carrot, wild herbs, white pepper, citrus peel, and subtle floral notes. On the palate, it is silky and vibrant with flavors of sweet root vegetable, ginger, fennel, mineral earthiness, and delicate spice balanced by remarkable freshness and purity.

What makes this eau-de-vie so compelling is its ability to remain refined and precise while showcasing such an unconventional raw material. Rather than feeling gimmicky, it highlights the same terroir-driven philosophy and craftsmanship found in the world’s great fruit brandies.
