Negaibito Whispers of Ash Yamahai Junmai Sake (720ml)

Brewed by Shiokawa Sake Brewery in Niigata, Japan, Negaibito “Whispers of Ash” is a Yamahai Junmai made from Koshi Ibuki rice polished to 70%. Founded in 1912, Shiokawa is located in Niigata City’s Uchino district, an area with abundant groundwater connected to the Shinano River system. The traditional Yamahai method develops the yeast starter without the labor-intensive yama-oroshi mashing step, encouraging the development of natural lactic acid and contributing greater acidity, umami and depth to the finished sake.

Rich and savory, it shows distinctive notes of pumpkin, green pear and tart yogurt. The palate has a substantial, slightly oily texture that complements its pronounced acidity and umami, finishing dry and structured rather than overtly fruity or sweet. Its combination of richness and acidity makes it particularly versatile alongside flavorful foods.
