Rums of Mexico Cana Criolla Pedro Bautista Rum (700ml)

Produced by Pedro Bautista in Zoquiapam Boca de los Ríos, Oaxaca, Caña Criolla is an unaged Mexican rum made from fresh sugarcane juice. Bautista is a second-generation aguardientero who works with a small group of local cane growers along the Río Monteflor.

The Caña Criolla used for this bottling is cultivated by Daniel Vega Santiago. A hardy, yellow-colored cane variety, it grows in the area's arid landscape among columnar cacti and biznagas and is irrigated with water drawn from the nearby Río Monteflor. After harvest, the fresh cane juice undergoes a long fermentation in closed 1,100-liter tanks, regularly exceeding 20 days.

Bautista distills the fermented juice on a continuous four-plate copper still that he has worked with for approximately two decades. Bottled at 51.9% ABV without barrel aging, Caña Criolla is an expressive example of Oaxaca's traditional sugarcane distilling culture, with grassy and tropical fruit notes complemented by savory, mineral character.
