Chacolo Destilado de Agave Lineno Cimarron Ixtero Amarillo (750ml)

Produced by the Partida family in Zapotitlán de Vadillo, Jalisco, this Destilado de Agave is an ensamble of three regional agave varieties: Lineño, Cimarrón, and Ixtero Amarillo. The release reflects Chacolo’s deep commitment to preserving the traditional agaves and distilling practices of southern Jalisco.

The agaves are given an unusually long period of maturation in the field. After the flowering stalks are cut—a practice known as capón—the Lineño and Cimarrón remain in the ground for an additional three years, while the Ixtero Amarillo is left for four. Chacolo employs traditional production methods including pit roasting, natural fermentation, and distillation in the Partida family’s distinctive Filipino-style stills.

Bottled at approximately 48.8% ABV, the spirit is expressive and complex, with roasted agave at its core alongside earthy minerality, fresh herbs, peppery spice, citrus, and subtle fruit. The finish is long, savory, and gently saline, highlighting the distinctive character of Chacolo’s traditional Jalisco production.
