Akabu Junmai Ginjo Sake (720ml)

Brewed by Akabu Shuzo in Morioka, Iwate Prefecture, AKABU Junmai Ginjo is one of the brewery’s core expressions. Akabu Shuzo rebuilt in Morioka after its original brewery in Ōtsuchi was destroyed in the 2011 Great East Japan Earthquake, establishing its new brewery in 2013. This Junmai Ginjo is made with rice polished to 50%, an unusually high degree of polishing for the category.

Fresh and expressive, it offers bright ginjo aromatics reminiscent of apple, melon and delicate white flowers. The palate is juicy and polished, balancing fresh fruit and gentle sweetness with savory rice character and refreshing acidity. Despite its aromatic richness, it remains clean and precise, finishing with a subtle touch of bitterness and acidity that provides lift and definition.
