Baldoria Dry Vermouth Umami (750ml)

Baldoria Dry Umami is an innovative Italian dry vermouth that explores the savory side of the category. Built on a Chardonnay wine base, it combines traditional vermouth botanicals with porcini mushrooms and kombu seaweed, creating an unusual meeting point between earthy, woodland flavors and the briny character of the sea.

The botanical recipe includes wormwood, sweet orange, genepy, mushroom, seaweed, ginger, fennel, rosemary and sage. The botanicals are separately macerated in wine and a hydro-alcoholic solution before blending, followed by aging in stainless steel and light filtration.

Full-bodied, dry and distinctly savory, the profile emphasizes umami alongside herbal, earthy and maritime notes. Its unusual depth makes it particularly interesting in a Martini or other cocktails where a dry vermouth with pronounced savory character can take center stage.
