Bodegas Toro Albala Poley Solera Amontillado en Rama 35 Year (500ml)

From the historic Montilla-Moriles estate of Bodegas Toro Albalá, Poley Amontillado en Rama 35 Year comes from the winery’s foundational solera, established in 1922 when José María Toro Albalá began making wine at Lagar del Carmen. Produced from Pedro Ximénez, it spends approximately 10 years aging biologically beneath a veil of flor in American oak before the flor naturally weakens and the wine begins its long period of oxidative aging. The finished wine has an average age of approximately 35 years.

Deep amber with copper highlights, this is an intensely aromatic, bone-dry Amontillado, showing layers of toasted nuts, dried fruit, warm spice and seasoned wood alongside distinctive saline and savory notes. The palate is concentrated yet finely balanced, with pronounced minerality, freshness and a persistent, pleasantly bitter finish. Its combination of biological and oxidative aging gives the wine remarkable depth while maintaining an incisive, saline character.

21% ABV. Serve slightly chilled, around 52–54°F.
