Paranubes Rum Aguardiente de Caña Oaxaca (1L)

Paranubes is a traditional aguardiente de caña produced by third-generation distiller José Luis Carrera in Río Tuerto, deep in the Sierra Mazateca of northern Oaxaca. It is made entirely from fresh-pressed sugarcane juice rather than molasses, using four locally grown cane varieties: Criolla, Morada/Negra, Dulce and Dura. 

Fresh cane juice undergoes open-air fermentation in pine vats with ambient yeast before a single distillation in a copper hybrid still fitted with a six-plate column. Paranubes is unaged and bottled at 54% ABV, with the different distillation cuts blended to bottling strength rather than diluted with water. No additives are used. 

Full-bodied and distinctly cane-driven, it shows ripe tropical fruit alongside grassy, vegetal and savory notes, with an earthy, slightly funky character. Its combination of freshness, texture and intensity makes it equally interesting neat or in cane-spirit cocktails such as a Daiquiri.
