Fukuju Kai Junmai Ginjo Sake "Hide & Seek" (720ml)

Fukuju Kai “Hide & Seek” is a Junmai Ginjo from Japan, brewed in a deliberately bright, contemporary style. The sake uses a high-acidity yeast strain, resulting in substantially more pronounced acidity than is typical of many Junmai Ginjo expressions. The rice is polished to 60%, and, as a Junmai, it is brewed without the addition of distilled alcohol.

Fresh and energetic, it opens with notes of green apple, citrus zest and white peach, with hints of pear and melon underneath. The palate is light and silky, with gentle fruit sweetness offset by brisk, mouthwatering acidity. Citrus and subtle mineral notes carry through the clean, refreshing finish, giving this sake a particularly lively profile that works beautifully with seafood and lighter dishes.
