In the quiet, forested valley of Chizu in Tottori Prefecture, where over 95% of the land is covered in cedar forest and winters bring deep snowfall, Suwakura Brewery crafts sake shaped by nature and time. Tottori may rank near the bottom in production volume, but it stands apart for its high proportion of specially designated sake—most of it Junmai—known for its rich umami, depth, dryness, and earthy character.

Nearly forty years ago, the brewery’s toji turned to Tamasakae rice out of necessity when Yamada Nishiki was in short supply. That decision sparked a lasting commitment to the varietal and reflects a spirit of experimentation that defined the era. Around that same time, the 1989 vintage was brewed. Today, Mantensei 1989 stands as a rare expression of that moment—patiently aged for decades and offering a singular glimpse into traditional Japanese sake craftsmanship. With only limited quantities remaining, it is an increasingly scarce and remarkable sake.
